Meet Dan Cotler!

Dan Cotler has been cooking for almost a decade.  As a boy, he remembers sitting in the kitchen watching his mother and grandmother cook for their family. The flavors and memories left an impression and he admits cooking, and maybe even opening his own restaurant, were always an option on the back burner of his mind.

Following his passion, Dan left his desk job as an accounting firm to attend culinary school and study under chefs in Colorado. His Colorado influencers taught him “the basics,” as he calls it, focusing on fine dining, American fusion, and farm-to-table cooking. By the time he was ready to leave Colorado, he had graduated to pastry chef and jr. sous chef.  With his sights set on SLO, one of Dan’s coworkers, a former cook at Robin’s (Luna’s sister restaurant), referred him to Chef Shaun.

Dan arrived at Luna Red last September and was hired on the spot. So what does he think of SLO and his new Luna family?  “People aren't dragged down by the day to day.  They just enjoy life, and when the food is good it makes life just that much better.”
